IsoMetadonnee collects no data,

except when you choose using reverse geo-localization service.

In this case, GPS coordinates are transmited to Apple or OpenStreetMap.

No other metadata is transmited.

Your images and photo metadata .

IsoCours collects no data at all.

Exception :

When you use the IsoMétadonnees software's reverse geo-localization function, it transmits the GPS coordinates (included in image metadata) to the concerned service (Apple or OpenStreetMap) in order to obtain the requested information.
